Tomato Pesto

INGREDIENTS:

  • 100g semi-dried tomatoes
  • 3 tbsp olive oil
  • 3 clove(s) garlic, chopped
  • 1 ½ tbsp tomato paste
  • 30 g macadamia nuts, chopped

PREPARATION DIRECTIONS:

  1. 1.
    Process all ingredients in a food processor or blender until the desired consistency is reached. Add more oil if required.
  2. 2.
    Store in the fridge for up to one week or freeze in containers.
